Barbecue Korean Recipes From The Land Of The Morning Calm

Barbecue Korean recipes usually involve only either pork or beef, which is a great pity as Korean food has it's own very distinctive flavours. Korea is a peninsular, thrusting between China and Japan and has a 5000-year-old history, making it one of the oldest cultures in Asia. During the Chosen dynasty it became know as the Land Of The Morning Calm. Surrounded by water, the primary food source of Korea is seafood. Only twenty percent of the land is arable and half of this is used for growing rice, with small pockets devoted to cattle grazing. Pork is also eaten, but this is mainly in the North, while beef is preferred in the South.

Barbecue Korean beef ribs recipes are a speciality and use 'short' ribs. These start off as full size ribs that are cut into two-inch sections before cooking. The ribs are then marinated in a simple marinade and simply grilled until cooked. Barbecue Korean recipes use fewer 'special' ingredients than barbecue Chinese recipes, making the food easier to prepare and cook.

Barbecue Korean Beef Ribs (Bul Kogi)

Preparation time: 10 minutes
Marinade time: 120 minutes
Cooking time: 30 minutes

Serves 6

  • 4 to 5 pounds of beef short ribs
  • 2 cloves of garlic, crushed
  • 1/4 cup sesame seeds, toasted/crushed
  • 1 cup finely chopped scallions (spring onions)
  • 1 teaspoon of pepper
  • 1 teaspoon of sesame oil
  • 2 cups of soy sauce
  • 1 cup of sugar
  • 1/4 cup of oil

1. Place short ribs in a bowl.

2. Add garlic, sesame seeds, scallions, pepper, sesame oil, soy sauce, sugar and oil and toss to coat well. Cover and let stand at room temperature for 2 hours.

3. Barbecue over coals or under broiler, turning and basting often with marinade until meat is tender.


Barbecue Korean Beef Short Ribs

Preparation time: 10 minutes
Marinade time: 90 minutes
Cooking time: 30 minutes

Serves 6

  • 4 pounds of meaty beef short ribs
  • 3 tablespoons of sugar
  • 1/4 cup sesame oil
  • 1/2 cup of soy sauce
  • 1 tablespoon of cider vinegar
  • 2 scallions (spring onions) and tops, minced
  • 2 cloves of garlic, minced
  • 1 tablespoon of finely minced fresh ginger root
  • 1 teaspoon of red pepper flakes
  • 1/4 cup of sesame seeds
  • 1 tablespoon of flour

1. Make deep cuts in the ribs so that the meat will absorb the marinade

2. Rub the meat well with the sugar and sesame oil and let sit for 30 minutes

3. Combine the remaining ingredients; pour over the ribs and let stand for 1 hour.

4. Bake or barbecue, turning and basting frequently with marinade, for 20 to 30 minutes or until meat is cooked.
