Cancun Barbecue Steak With Avocado Sauce

Cancun barbecue steak - beef steak given a distinctly Mexican flavour

Serves 6
6 beef steaks
1 red onion, grated
2 red chillies, deseeded for a milder strength
2 garlic cloves, crushed
4 teaspoons of fresh coriander (cilantro), finely chopped
1 teaspoon of dried oregano
1 teaspoon of ground cumin
4 tablespoons of sunflower oil

For the avocado salsa
2 ripe avocados
grated rind and juice of 3 small limes
2 tablespoons of sunflower oil
1 red onion, finely chopped
2 red chillies, deseeded for a milder strength
2 teaspoons of fresh coriander (cilantro), chopped
salt and pepper

1. Make slits in the fat around each of the steaks. Or remove the fat altogether if preferred. Place the steaks in a large, shallow dish.

2. Combine the oil, onion, chilli, garlic, coriander (cilantro), oregano and cumin in a small bowl and mix together. Pour over the steaks, turning them so that they're well covered. Leave to marinade in a fridge for 2 hours.

3. Meanwhile make the salsa. Halve the avocado and remove the stone. Peel the flesh and cut into small dice.

4. Put the diced avocado, lime rind and juice, oil, onion, chilli, coriander (cilantro), salt and pepper into a dish and mix well. Cover and refrigerate until required.

5. Oil the grill tray and barbecue the steaks over hot coals for about 10 to 15 minutes on each side.

6. Serve the steaks with the avocado salsa.
