This courgette salad includes fruits, apples and oranges, mixed with walnuts and lettuce that creates a light Summery salad that can be served with any type of meat.

Serves 6

Preperation time: 10 - 15 minutes

• 1/2 Lollo rosso lettuce, washed and dried
  
• 4 oz (100g) Courgetts, thinly sliced in to discs
  
• 2 oranges, peeled and segmented
  
• 1 Sessert apple, cored but not peeled, and sliced in to thin wedges.
  
• 2 tablespoons walnuts, chopped
  

For the dressing

• 2 tablespoons sunflower oil1 green chilli, finely chopped. Remove the
  seeds first if you prefer less heat
• Juice of half a lemon
• 1 tablespoon chopped fresh parsley
• 1 teaspoon of sugar

1. Tear the lettuce leaves and place in a serving bowl.

2. Scatter the courgettes, orange, apple and walnuts over the lettuce.

3. Make the dressing by mixing all of the other ingredients together in a small bowl.

4. Pour the dressing over the salad and serve.
