Lip Smacking Hawaiian Chicken Recipe
With A Pineapple Barbecue Sauce

Hawaiian Chicken recipe marinated in a sweet and sour pineapple sauce.

This grilled hawaiian chicken recipe uses whole chicken breasts. If you prefer tou could cut the breasts up in to chunks and make hawaiian chicken kabobs.

Alternatively you could use chicken legs and make hawaiian barbecue chicken drumsticks and thighs.

Marinate the chicken in the sauce and then remove the chicken and reduce the remaining marinade to make an hawaiian bbq sauce.

Serves: 6

Preperation: 10 minutes.

Marinate: 2 hours/overnight.

Ingredients:

  • 6 Chicken breasts
  • 8 fl oz (250ml)of pineapple juice
  • 2fl oz (60ml) cup of soy sauce
  • 2fl oz (60ml) of olive oil
  • 2 tablespoons of Worcestershire sauce
  • 1/2 teaspoon of ground ginger
  • 1 tablespoon of brown sugar
  1. Rinse the chicken breasts under cold water, pat dry with a clean towel.

  2. Make about 3 slashes in each chcken breast about a half inch deep then place in a shallow bowl.

  3. Mix all of the other ingedients together and then pour over the chicken. Ensure that the chicken is thoroughly coated. Cover and refrigerate for at least 2 hours or overnight.

  4. Drain the chicken breasts but reserve the marinade in a pan.

  5. Lightly oil the grill and place the chicken breast skin side down over hot coals for about 4 to 5 minutes. Turn over and cook for a further 5 minutes until cooked through.

  6. While the chicken is cooking heat the marinade in the pan until boiling. Reduce to a simmer and cook, stirring until the sauce has reduced to a syrupy like consistancy.

  7. This hawaiian chicken recipe is best served with the sauce poured over and with a green salad and, or rice.
