Easy To Make Marinades For Grilled Pork Chops
There are hundreds of marinades for grilled pork chops.
The reason being that pork is a very versatile meat and can take lots of different flavour marinades from mild and delicate through to hot and spicy.
I don’t know anyone that doesn’t like gnawing on a pork chop; except for vegetarians that is.
The recipes shown below are for marinades for grilled pork chops cooked using direct heat on an open topped barbecue.
Both marinade recipes are from Steven Raichlen’s Barbecue Bible books.
Sweet And Garlicky Marinade For Pork Chops.
- 1 head of garlic, broken into cloves and peeled
- 3 tablespoons of sugar
- 1/3 cup Asian fish sauce or soy sauce
- 3 tablespoons of honey
- 3 tablespoons of rice wine
- 2 tablespoons of Asian (dark) sesame oil
- 1 tablespoon of grated fresh ginger
- 2 teaspoons of salt
- 1 teaspoon of freshly ground black pepper
Combine the garlic and sugar in mini chopper of food processor and process to a paste, or pound to a paste in a mortar using a pestle. Work in the fish sauce, honey, rice wine, sesame oil, ginger, salt and pepper.
Use straight away or cover and refrigerate. It will keep for several days.
This recipe is enough for about 2 pounds of pork chops.

Wild Game Marinade With juniper And Gin
This marinade for grilled pork chops will make your pork taste like wild boar.
- 3 cups of dry white wine
- 1/2 cup balsamic vinegar
- 1/2 cup extra virgin olive oil
- 2 tablespoons gin
- 1 medium onion, thinly sliced
- 1 carrot, thinly sliced
- 1 rib celery, thinly sliced
- 2 cloves garlic, flattened with the side of a cleaver
- 2 tablespoons chopped fresh parsley
- 2 tablespoons juniper berries
- 2 teaspoons black peppercorns
- 2 bay leaves
- 2 whole cloves
- 2 sprigs fresh thyme, stripped, or ½ teaspoon dried thyme
Combine all of the ingredients in a saucepan and bring to a boil over medium high heat. Cool to room temperature.
Use right away or transfer to jars, cover, and refrigerate. The marinade will keep for several days.
Makes enough for about 3 pounds of meat.
