Thai Chicken Drumsticks with a hot citrus coating.

Barbecue drumsticks are always a favorite.
This Thai chicken recipe includes red chillies to give an extra spicy
flavor.

Serves 6
Ingredients
- 12 chicken drumsticks
- 4 Garlic cloves, finely chopped
- 4 lemongrass stems
- 2 hot red chillies
- 3 tablespoons of freshly chopped cilantro (coriander)
- 3 tablespoons of honey
- 1 tablespoon of fish sauce
- Juice of 1 lime
- Salt and freshly ground black pepper

- Remove the outer layers from the lemongrass, finely chop and put in
to a bowl.
- Finely chop the red chillies and put in to the bowl. If you prefer
less heat, remove the seed before chopping.
- Place all of the other ingredients, except the chicken in to the bowl
and mix well.
- Slash the chicken drumsticks in 2 or 3 places.
- Place the chicken in to a shallow bowl then our over the marinade.
Coat the chicken thoroughly. Cover the chicken then refridgerate for at least
2 hours, or overnight.
- Cook the chicken over medium hot coals for about 15 minutes, turning
and brushing with the remaining marinade regularly untill cooked through.
- Serve with a green salad and, or rice.
