Thai Chicken Drumsticks


Thai Chicken Drumsticks with a hot citrus coating.

Barbecue drumsticks are always a favorite.

This Thai chicken recipe includes red chillies to give an extra spicy flavor.

Serves 6

Ingredients

  • 12 chicken drumsticks
  • 4 Garlic cloves, finely chopped
  • 4 lemongrass stems
  • 2 hot red chillies
  • 3 tablespoons of freshly chopped cilantro (coriander)
  • 3 tablespoons of honey
  • 1 tablespoon of fish sauce
  • Juice of 1 lime
  • Salt and freshly ground black pepper

 

  1. Remove the outer layers from the lemongrass, finely chop and put in to a bowl.

  2. Finely chop the red chillies and put in to the bowl. If you prefer less heat, remove the seed before chopping.

  3. Place all of the other ingredients, except the chicken in to the bowl and mix well.

  4. Slash the chicken drumsticks in 2 or 3 places.

  5. Place the chicken in to a shallow bowl then our over the marinade. Coat the chicken thoroughly. Cover the chicken then refridgerate for at least 2 hours, or overnight.
  6. Cook the chicken over medium hot coals for about 15 minutes, turning and brushing with the remaining marinade regularly untill cooked through.
  7. Serve with a green salad and, or rice.
