Thai Sesame Noodles


Thai Sesame Noodles tossed in a dressing including sesame oil and seeds, peanut butter, chilli and lime juice.


This recipe for sesame hot noodles lifts plain egg noodles to another level.

Serve these noodles hot to accompany a main meal

Serves 6

Ingredients

  • 2 x 8oz (250g) packets of rice noodles
  • 3 Tablespoons of sunflower oil
  • 2 Tablespoons of sesame oil
  • 1 garlic clove, crushed
  • 1 tablespoon of smooth peanut butter
  • 1 green chilli, finely chopped. Remove the seeds first if you prefer less heat
  • 3 tablespoons of toasted sesame seeds
  • Salt and freshly ground black pepper
  • 4 tablespoons of fresh coriander, chopped

 

  1. Cook the noodles by following the instructions on the packet.

  2. For the dressing, in a small bowl mix together the sunflower oil, sesame oil, garlic and peanut butter.

  3. Add the chilli, sesemae seeds, soy sauce and lime juice. Mix well then add salt and pepper to taste.

  4. Thoroughly drain the noodles and place in a serving bowl, add the dressing and coriander and toss well to mix. Serve immediately.
